Stay High Coffee roasters was started by Tom and Kat in February of 2023, They’re both baristas by trade, working in speciality coffee shops in London when they met back in 2016. Initially, they had planned on opening a coffee shop together, but better still, wound up roasting their own beans from a unit in London.
They are using a 5kg Diedrich roaster to produce some truly special coffees in small batches. We had a really hard time choosing between them, although that said, both Paul and I decided right after the first cupping that no matter which one we chose, you were going to love it.
Tom and Kat have a keen eye for quality, but they’re equally as invested in sustainability too. They have been working with some top-quality importers like 88 Graines and Unic, so you can rest assured that not only are you getting incredible-tasting coffee beans, but you’ll also be a part of doing some good for the planet.

Long story short, Tom spent a week at a coffee farm at Finca El Llano, in the Acatenango region of Guatemala, and fell in love with both the people and the place. This is an opportunity they have manufactured, alongside eighty-eight graines, to give back to the coffee farming community and help drive things forward by helping plant more coffee trees, specifically more hybrid varietals with increased resistance to disease, better productivity and better climate resistance. I cant help but feel like we all win there, its good for the farmers and their families, its good for the soul and its really very good for quality of your coffee.
