This coffee is a kind of best of both worlds for me. It starts out tasting kiiiinda classic, smooth, slightly nutty cocoa, with a *hint* of sweetness at the end, but boy does it switch gears on you. As it cools it really opens up into this whole different animal! You get a real juicy sweetness come through, like gummy sweets, super fruity and sweet. The honey anaerobic process gives it a nice balanced, juicy, body. My best advice, let it sit a while, take your time and enjoy it as a filter coffee.
