Q&A WITH DAVE

Q&A WITH DAVE

We thought we’d do a little Q&A type thing, so that you can get to know a little more about us both, here at Team LC. I won’t bore you with a preamble, so let’s get stuck into it 🙌🏼

WHAT’S YOUR GO TO HOME COFFEE?

I’m a creature of habit, me. So it starts out like this - double espresso to kick things off in the morning, then I’ll usually start to prepare a two-cup V60 for my better-looking half and I, while I’m drinking the espresso.

DO YOU HAVE A FAVOURITE ORIGIN/PROCESS METHOD?

If you’d have asked me this a year or so ago, it’s outright natural Ethiopia for me, hands down. But starting Limited Coffee has pushed me into way more exploration, I’m still a sucker for a natural process, but anoxic/anaerobic fermentation coffees are almost always pretty exciting too. Honduras Parainema is up there with the best when it comes to origins. Basically, fruit-forward, funky, and boozy. Big hitting complex flavours - the same as I like my whiskey and wines!

WHAT DOES YOUR HOME COFFEE SET UP LOOK LIKE?

Up until not too long before LC began, I had a Gaggia Classic taking care of espresso, but it had been gathering dust for some time, so it went to a new home. For now I have a Delonghi Dedica, with bottomless portafilter and EMS baskets, until I can justify something shinier, it does a great job considering though. Then there are filters on filters, V60, Kalita Wave, Timemore B75, Aeropress and a cafetière of course. We also have a Wilfa filter machine for the lazy days, a Sage grinder and most recently a Kingrinder K6 hand grinder. Let’s just say I like variety ✌🏼

WHAT’S YOUR GO TO COFFEE SHOP ORDER?

Oat cortado or hand-poured filters for me.

WHAT’S YOUR COFFEE STRATEGY WHILE ON HOLIDAY?

Gotta be Aeropress and a hand grinder if it’s just me, or V60 if I’m making coffee for both of us. Either way, life’s too short for instant!

DO YOU HAVE A MOST MEMORABLE COFFEE MOMENT/STORY?

You know, I can’t pinpoint the exact moment, but probably back in 2016, when Wayland’s Yard opened in Worcester - serving Method coffee, that was probably my first proper taste of real speciality coffee and it really ignited a fire. There were always great people working there, shout to Filip, wherever you are these days (Romania, maybe?) 🙏🏼

WHAT’S BEEN THE BEST THING ABOUT LC SO FAR FOR YOU?

Honestly, the people! I was never expecting the coffee industry to be so open and welcoming. Everyone has been truly great, as cheesy as that sounds. We’ve had some real help along the way from all sorts of people, that I just didn’t expect and almost everyone has been really encouraging ❤️ of course the coffee has been great too 😅

WHAT DO YOU DO FOR WORK OUTSIDE OF LC?

For my sins, I’ve worked in local policing for 15 years now, doing my bit to support my local community and help where I can. Sometimes it’s the best job in the world, others it’s the darkest, most awful place to be. But I’m here to make a difference.

WHAT DO YOU DO IN YOUR SPARE TIME?

Spare time? What is ‘spare time?’ But for real, I’ve always loved bikes, I was smashing the kms on my road bike until I started suffering from back problems, but we’ll get back there. Otherwise I like to go gym and recently enjoying visiting National Trust properties with Kate, she’s a real gem for putting up with my lack of free time, well, just putting up with me in general to be honest. But that’s about it.

DO YOU HAVE ANY FUN FACTS?

I used to be a pretty die hard dog person, all cats are assholes right? Well, we got a little kitten, Goose, just over two years ago. He is now my child, and I would die for him. I’m not even being dramatic, just look at his face, he is an actual angel (when he’s not being part demon I guess!). Who knew, a cat could change a man?
